If all the gentlemen were gentlemenly all the time it would be less noticable, so when they are gentlemanly people watching are in a higher state of bewilderment such as yourself. It also problaby helps with getting ladies, if everyone is always nice to them they don't notice the gentlemen as often but at moments like you described....it worked out perfectly for the man sitting down.
